Coat bread in olive oil and cook for 2-3 min per side until golden brown. Remove from pan and set aside.
Add bacon to same pan and cook on medium heat for about 4 min per side or until desired crispiness. Transfer to a paper towel lined plate.
Make pesto mayo by combining mayo, pesto and pickle brine.
Spread pesto mayo on toast and add turkey, slices of tomato, bacon, red onion, lettuce, and banana peppers. That's it! Enjoy!
