Smoked Salmon, Avocado and Broccolini Bowls

This smoked salmon, avocado and broccolini bowl with sizzly lemon yogurt and poached eggs is one you’re going to make on repeat. This broccolini bowl is simple yet flavorful, has so much protein, and is so easy to make. With just a couple of ingredients your breakfast will be elevated to the next level. Gather your brocccolini, Greek yogurt, lemon, smoked salmon, avocado, eggs, garlic, and EVOO. You’ll sauté your broccolini first until it’s nice and brown. You’ll add a lemon directly into this pan. Charring your lemons adds so much extra flavor dressings etc. don’t be afraid to keep them in the pan a little long. You’ll then make your poached eggs. Like I said, this bowl is packed with so much protein you’ll be fueled up for the whole day. Before you assemble your broccolini bowl, you’ll take a shallow bowl and coat the bottom in a layer of Greek yogurt. You’ll pile everything onto of the yogurt base. Smoked Salmon, Avocado, and Broccolini Bowls

Ingredients

  • 3/4 cup greek yogurt
  • 1 lemon
  • Broccolini
  • Smoked salmon
  • 1/2 avocado sliced
  • 2 eggs
  • 1 garlic clove sliced
  • Glug of olive oil

Instructions

  • Step 1: In a medium skillet, add olive oil and sliced garlic. Wash and trim any large pieces of the broccolini. Add to the pan and cook for about 5 min or until it starts to get tender and brown. Season with salt and pepper. Slice lemon and clear a little area in the pan. Add lemon and sear for a few minutes until blackened. Sizzling the lemon adds some delicious extra flavor. Remove broccolini and roughly chop.
  • Step 2: In a small bowl crack an egg. Heat a pot of water and when it’s at a rolling boil, use a spoon to make a swirl with the water (like the shape of a tornado) Add in your egg and continue to stir (carefully, without touching the egg) until the water comes back to a boil. Cook for about 2 more min for a runny poached egg.
  • Step 3: Add yogurt to a shallow bowl. Give it a good squeeze of lemon and season with salt and pepper. Top with slices of smoked salmon, avocado and poached eggs. Squeeze more lemon juice over top and season with more salt and pepper. Enjoy!
