The bowl is often finished with poached eggs, a drizzle of lemon juice or olive oil to brighten the flavors and bring everything together.

This bowl is a perfect balance of healthy fats, protein, and greens, making it ideal for a light lunch or dinner. The combination of smoky salmon, buttery avocado, and earthy broccolini offers a harmonious mix of tastes and textures that feel both comforting and refreshing. Smoked Salmon, Avocado, and Broccolini Bowls

Ingredients

  • 3/4 cup greek yogurt
  • 1 lemon
  • Broccolini
  • Smoked salmon
  • 1/2 avocado sliced
  • 2 eggs
  • 1 garlic clove sliced
  • Glug of olive oil

Instructions 

  • In a medium skillet, add olive oil and sliced garlic. Wash and trim any large pieces of the broccolini. Add to the pan and cook for about 5 min or until it starts to get tender and brown. Season with salt and pepper. Slice lemon and clear a little area in the pan. Add lemon and sear for a few minutes until blackened. Sizzling the lemon adds some delicious extra flavor. Remove broccolini and roughly chop.
  • In a small bowl crack an egg. Heat a pot of water and when it’s at a rolling boil, use a spoon to make a swirl with the water (like the shape of a tornado) Add in your egg and continue to stir (carefully, without touching the egg) until the water comes back to a boil. Cook for about 2 more min for a runny poached egg.
  • Add yogurt to a shallow bowl. Give it a good squeeze of lemon and season with salt and pepper. Top with slices of smoked salmon, avocado and poached eggs. Squeeze more lemon juice over top and season with more salt and pepper. Enjoy!
