This is my crispy, cheesy potato bake topped with scallion cream cheese, lox, and scallions. It starts with thinly sliced potatoes, layered and held together by plenty of melty gruyere and mozzarella cheese. Once baked, the potatoes come together in that works perfectly as a sandwich base or, in this case, as a delicious breakfast bake.
To take it up a notch, I topped mine with a generous layer of scallion cream cheese, lox, fresh scallions, a ton of dill, and a sprinkle of everything but the bagel seasoning. The combination of flavors and textures is unreal. You can fold it into a sandwich for a heartier bite or leave it flat like this—it’s perfect as an impressive appetizer or a fun twist on breakfast.

Cheesy potato bake topped with scallion cream cheese & lox
Ingredients
- 2 potatoes thinly sliced
- 1/2 cup mozzarella shredded
- 1/3 cup gruyere shredded
- Sea salt
- Pepper
- Olive oil
- 1 tsp garlic powder
- 1/2 cup cream cheese
- 2 tbsp scallions plus more for topping
- A few slices of smoked salmon
- Sliced red onion
- Everything but the bagel seasoning
- Fresh dill
- Capers
Instructions
- Preheat oven to 400. Thinly slice potatoes and coat in a nice glug of good olive oil. season with salt pepper and garlic powder.
- Overlapping the potatoes lay them on parchment paper in rows of 4 or 5. I did 6 rows but you can do whatever you want. Generously sprinkle with shredded cheese and bake for about 25 min or until browned, golden and cheese is bubbling.
- Once potatoes have cooled slightly, top with cream cheese, lox and whatever other fixings you want! Eat flat or fold like a sandwich. Enjoy!
