Cheesy potato bake topped with scallion cream cheese & lox

Ingredients

  • 2 potatoes thinly sliced
  • 1/2 cup mozzarella shredded
  • 1/3 cup gruyere shredded
  • Sea salt
  • Pepper
  • Olive oil
  • 1 tsp garlic powder
  • 1/2 cup cream cheese
  • 2 tbsp scallions plus more for topping
  • A few slices of smoked salmon
  • Sliced red onion
  • Everything but the bagel seasoning
  • Fresh dill
  • Capers

Instructions

  • Preheat oven to 400. Thinly slice potatoes and coat in a nice glug of good olive oil. season with salt pepper and garlic powder.
  • Overlapping the potatoes lay them on parchment paper in rows of 4 or 5. I did 6 rows but you can do whatever you want. Generously sprinkle with shredded cheese and bake for about 25 min or until browned, golden and cheese is bubbling.
  • Once potatoes have cooled slightly, top with cream cheese, lox and whatever other fixings you want! Eat flat or fold like a sandwich. Enjoy!
