Preheat oven to 400. Thinly slice potatoes and coat in a nice glug of good olive oil. season with salt pepper and garlic powder.
Overlapping the potatoes lay them on parchment paper in rows of 4 or 5. I did 6 rows but you can do whatever you want. Generously sprinkle with shredded cheese and bake for about 25 min or until browned, golden and cheese is bubbling.
Once potatoes have cooled slightly, top with cream cheese, lox and whatever other fixings you want! Eat flat or fold like a sandwich. Enjoy!
