This is one of my favorite healthy reset sandwiches and a go-to option for meal prepping an entire week of delicious, satisfying lunches. Meet my pesto chicken and balsamic mushroom sandwich: a flavorful combination of tender chicken coated in vibrant pesto, perfectly caramelized balsamic mushrooms, and your choice of fresh bread. To make it, you’re going to cook your chicken, and while that’s cooking, add your mixed mushrooms to a pan with some salt, pepper, and balsamic for an extra punch of flavor. Once everything is ready, you’ll layer all of these goodies on your favorite bread—I used brioche for this sandwich, and it’s absolutely divine. Not only is it packed with nutrients, but it’s also incredibly easy to make in batches, making it the ultimate meal prep recipe that you’ll look forward to eating every single day! For the ingredients:
I always reach for Alessi balsamic glaze and pesto because they have such a vibrant, authentic flavor that really elevates the dish. These ingredients add that little extra something that makes this sandwich unforgettable.

Pesto chicken and balsamic mushroom sandwich
Ingredients
- Bread of choice (this is brioche sandwich bread)
- 1 Chicken thigh per sandwich You could also do rotisserie chicken for added ease
- A drizzle of olive oil
- Salt
- Pepper
- Alessi pesto spread
- Alessi balsamic glaze
- Alessi balsamic vinegar
- Mixed mushrooms
- A few tbsp of butter
- Handful of arugula
- A few tbsp if grated parmesan
Instructions
- Preheat oven to 400. Drizzle olive oil on chicken and season with salt and pepper. Bake for about 10 min per side or until the chicken reaches an internal temperature of 165. When cool enough to touch, sliced chicken into strips
- Meanwhile, add butter to a skillet. Chop mushrooms and add to the skillet with salt, pepper and a drizzle of balsamic vinegar. Cook for about 8 minutes or until the mushrooms are tender.
- Toast bread and add pesto spread. Add chicken, balsamic mushrooms, a sprinkle of parmesan and a handful of arugula. That’s it! Enjoy!
