Pesto chicken and balsamic mushroom sandwich

Ingredients

  • Bread of choice (this is brioche sandwich bread)
  • 1 Chicken thigh per sandwich You could also do rotisserie chicken for added ease
  • A drizzle of olive oil
  • Salt
  • Pepper
  • Alessi pesto spread
  • Alessi balsamic glaze 
  • Alessi balsamic vinegar 
  • Mixed mushrooms
  • A few tbsp of butter 
  • Handful of arugula 
  • A few tbsp if grated parmesan 

Instructions

  • Preheat oven to 400. Drizzle olive oil on chicken and season with salt and pepper. Bake for about 10 min per side or until the chicken reaches an internal temperature of 165. When cool enough to touch, sliced chicken into strips
  • Meanwhile, add butter to a skillet. Chop mushrooms and add to the skillet with salt, pepper and a drizzle of balsamic vinegar. Cook for about 8 minutes or until the mushrooms are tender.
  • Toast bread and add pesto spread. Add chicken, balsamic mushrooms, a sprinkle of parmesan and a handful of arugula. That’s it! Enjoy!
