I’ve been calling this my meat lovers breakfast sandwich and for good reason — this is my homemade breakfast sausage sourdough sandwich with a pesto egg, prosciutto and a handful of arugula.

I’ve been calling this my meat lovers breakfast sandwich and for good reason — this is my homemade breakfast sausage sourdough sandwich with a pesto egg, prosciutto and a handful of arugula.  The sausage is herby with a little heat and sweetness from some fennel and hot honey & then stacked on homemade sourdough with a little Alessi Calabrian chili yogurt. One of the things that makes this dish so good, is the quality of the ingredients. I use Alessi Pesto and Calabrian Chili Crisp. It is certainly stacked and so so good for a slow weekend morning!

Meat Lovers Breakfast Sandwich

Ingredients

The Breakfast Sausage

  • 8 oz Ground Italian sausage
  • 1 tsp Fennel seeds
  • 1/2 tsp Fresh thyme
  • 1/2 tsp Fresh chopped sage
  • 1/2 tsp Fresh chopped rosemary
  • 1 tsp Hot honey
  • Sea salt
  • Pepper

The Rest:

  • 2 Slices sourdough bread
  • 2 tbsp Pesto Homemade or store bought. I used Alessi
  • 1 tbsp Grated parmesan cheese
  • 1 Egg
  • A few slices of prosciutto
  • Handful of arugula
  • 1 tbsp Greek yogurt
  • 1 tsp Alessi Calabrian chili crisp
  • 2 tbsp Butter
  • Squeeze of lemon

Instructions 

  • Add sausage to a bowl with the rest of the breakfast sausage ingredients and mix until thoroughly combines. Mold them into two thin patties.
  • Add butter (or alternatively, neutral oil) to a skillet and add patties. Cook about 3-4 min per side or until golden and cooked through. Remove from skillet and wipe out the pan
  • Add a little pesto to the pan on medium heat and spread in an even layer. Crack an egg over pesto and top with grated parmesan cheese. Cook for a few minutes for an over easy egg.
  • Toast bread and combine yogurt, Calabrian chili crisp and a squeeze of lemon to a bowl and mix until combined. Add to toasted bread.
  • Add sausage patties, egg and prosciutto and top with a handful of arugula. Close sandwich and that's it! Enjoy!
