Add sausage to a bowl with the rest of the breakfast sausage ingredients and mix until thoroughly combines. Mold them into two thin patties.
Add butter (or alternatively, neutral oil) to a skillet and add patties. Cook about 3-4 min per side or until golden and cooked through. Remove from skillet and wipe out the pan
Add a little pesto to the pan on medium heat and spread in an even layer. Crack an egg over pesto and top with grated parmesan cheese. Cook for a few minutes for an over easy egg.
Toast bread and combine yogurt, Calabrian chili crisp and a squeeze of lemon to a bowl and mix until combined. Add to toasted bread.
Add sausage patties, egg and prosciutto and top with a handful of arugula. Close sandwich and that's it! Enjoy!
