Manchego turkey sandwich with a pistachio pesto & ricotta spread

Elevate your turkey sandwich with manchego and a pistachio pesto ricotta spread

The Deets

This is such a delicious and vegetable forward turkey sandwich to spice up your lunch routine! I love pesto on everything, but when you add ricotta, it’s even better! This sandwich is super easy to make and just so delicious. Here’s what you need: manchego, red onion, spinach, and turkey. The savory manchego mixed with red onion and pesto gives such a nice flavor profile here. I made a pistachio pesto, which is really easy in a food processor, but you can also use a store-bought one that’ll be just as delish. You’ll combine the pesto with ricotta and it’ll really take this spread to the next level. I used a sourdough for this but you can use any bread of choice. The pesto mixed with ricotta will really elevate your classic turkey sandwich game. Whether you enjoy it as a quick weekday lunch or a satisfying weekend sandy, this turkey sandwich is sure to elevate your lunchtime game.
