
This is such a delicious and vegetable forward sandwich to spice up your lunch routine! I love pesto on everything, but when you add ricotta, it’s even better!

Manchego turkey sandwich with a pistachio pesto & ricotta
Ingredients
The Pesto
- 1 cup basil leaves
- 3/4 cup olive oil
- 2 garlic cloves
- 1/2 cup parmesan cheese
- 1/4 cup pistachios
- sea salt
- pepper
The rest
- bread of choice
- olive oil
- Manchego cheese
- red onion
- spinach
- turkey
Instructions
- Make your pesto. In a food processor, add pesto ingredients and blend. Taste test and adjust accordingly.
- Coat bread in olive oil and cook for 2-3 min per side. Add pesto to a bowl with a spoonful of ricotta and combine. Add to bread.
- Add turkey, slices of manchego, red onion and spinach. Enjoy!
