Here’s a fun and creative twist on your typical breakfast burrito: homemade tortilla bowls! I first stumbled upon this idea when a friend of mine tried to make tortilla bowls in a pan on the stove, and the result was delicious but not quite as crispy as I hoped. That’s when I decided to take it a step further and try baking them in the oven to achieve that extra crunch. The result was a perfectly crispy, golden bowl that could hold all your favorite breakfast ingredients.

These tortilla bowls were such a fun and interactive way to elevate a weekend breakfast. Instead of the usual wrap or tortilla for a burrito or taco, I got to enjoy the crunch of the bowl with every bite. The best part is that you can fill them with whatever your heart desires. For mine, I stuck with the classic breakfast taco and burrito fillings—scrambled eggs, salsa, cheddar cheese, sour cream, and black beans—but you can get as creative as you like! Add some sautéed veggies, crispy bacon, or even hash browns for extra flavor and texture. And of course, no breakfast bowl is complete without a generous topping of creamy avocado to tie everything together.

This twist on a traditional breakfast was not only fun to make but also made for a beautiful and satisfying start to the day. You could even prep these bowls ahead of time and keep them on hand for a quick breakfast during the week. The options are endless, and the crispy tortilla bowl makes everything taste even better! Ingredients

  • olive oil
  • tortillas
  • ramekin bowl or another ovenproof bowl
  • Tin foil

Filling:

  • Black beans
  • Salsa of choice
  • Cheddar cheese
  • Sour cream
  • eggs
  • Avocado

Instructions

  • Brush both side of your tortilla with oil. Turn your bowl upside down and place tortilla around it. Cover with tin foil to give your tortilla support and press it around the tortilla so it is flush with the bowl. Bake for about 5 min on 375. Check on tortilla and it should be able to stand on its own when you remove the bowl and tin foil. From there, place back in the oven for another 8 min or so.
  • Meanwhile make all your filling. I scrambled some eggs on the stovetop and then add them in with cheese and black beans. I broiled for about 4 min to melt the cheese and then topped with salsa, sliced avocado and sour cream. Enjoy!
