Hashbrown Breakfast Burrito

This hashbrown breakfast burrito is the perfect twist on the classic.

I’ve posted a lot of breakfast ideas on here, so you know I mean it when I say this is one of the best ways to make a breakfast burrito 🥵🙋🏻‍♀️. It has all the goods and, more importantly, a hashbrown in the middle. Here’s what you need to make this: tortilla, eggs, a little half-and half, avocado, bacon, cheddar, hashbrowns, some hot sauce (I love a cholula!), and a little sour cream. Feel free to substitute Greek Yogurt for sour cream. The hashbrown adds such a delicious crunch that really levels up this burrito. Once you cook up your eggs and bacon you’ll put it onto a tortilla and add the hashbrown on top. Fold the burrito up, and then put it back on the skillet to crisp up. I use a press to push down on the burrito, so everything is nice and snug in there. It also adds another layer of deliciousness to fry it up a little bit. You can really add whatever you want to this creation but definitely don’t skip the hashbrowns. This is perfect for a Sunday morning treat! Hashbrown Breakfast Burrito

  • 1 tortilla
  • 2 eggs
  • A dash of half and half
  • 1/2 avocado
  • 2 slices of bacon
  • A few slices of cheddar cheese grated
  • 1 hash brown
  • Hot sauce of choice
  • Sour cream or greek yogurt
  • 1 tbsp butter


  • Cook hash brown according to box instructions. I like to give it a quick sear in a pan at the end for extra crisp.
  • Whisk eggs in a bowl with the dash of half and half. Add butter to a hot hot pan and then add eggs. Push eggs into the middle so they form ribbons and turn off the heat. Your pan should be really hot so the eggs will cook quickly.
  • Cook bacon in a pan on medium heat until desired crispiness. Add cheese to a tortilla, followed by eggs, bacon, avocado, hash brown and sour cream (or greek yogurt). Fold the sides in and roll burrito. Add back to a pan and press down so it browns on the outside and gets super crispy. Cook for about 2-3 min per side. Enjoy!
