This Grilled Cheese & Pickle Sandwich takes a classic comfort sandwich and gives it a tangy pickly twist. I melted lots of sharp cheddar into sourdough bread while sliced spicy pickles add a punchy crunch and just the right amount of heat. A swipe of whole grain Dijon mustard brings everything together with a sharp, tangy bite that balances the richness of the cheese.

The combination is simple but packed with flavor—melty, savory, tangy, and a little spicy in every bite. I personally think that every sandwich is elevated when it has a bit of a crunch, and these pickles add exactly that. Its great as a quick lunch or paired with a bowl of soup when you want something cozy with a kick.

Grilled Cheese & Pickle Sandwich

This Grilled Cheese & Pickle Sandwich is cheesy, a little spicy and absolutely delicious. Great for a quick and easy lunch that hits all the notes.

Ingredients

Serves 1 sandwich
  • 2 slices sturdy bread (sourdough, country white, or multigrain)
  • 3/4 cup shredded sharp cheddar cheese
  • 3 tbsp sliced spicy pickles or regular pickles
  • 1 tbsp whole grain Dijon mustard
  • 1 tbsp softened butter (for the bread)

Instructions 

  • Spread the whole grain Dijon mustard on one side of a slice of bread. Layer the cheddar cheese evenly on top, then scatter the sliced spicy pickles over the cheese. Add more cheese on top of the pickles. Top with the remaining slice of bread.
  • Spread butter on the outside of both slices of bread. Heat a skillet over medium heat and place the sandwich in the pan. Cook for about 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheddar is fully melted.
  • Remove from the skillet, let sit for a minute so the cheese sets slightly, then slice and serve warm.

Notes

Tip: If your pickles are very juicy, pat them dry with a paper towel first to keep the sandwich crisp and prevent the bread from getting soggy.
