2slices sturdy bread (sourdough, country white, or multigrain)
3/4cup shredded sharp cheddar cheese
3tbspsliced spicy picklesor regular pickles
1tbspwhole grain Dijon mustard
1tbspsoftened butter (for the bread)
Instructions
Spread the whole grain Dijon mustard on one side of a slice of bread. Layer the cheddar cheese evenly on top, then scatter the sliced spicy pickles over the cheese. Add more cheese on top of the pickles. Top with the remaining slice of bread.
Spread butter on the outside of both slices of bread. Heat a skillet over medium heat and place the sandwich in the pan. Cook for about 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheddar is fully melted.
Remove from the skillet, let sit for a minute so the cheese sets slightly, then slice and serve warm.

Notes
Tip: If your pickles are very juicy, pat them dry with a paper towel first to keep the sandwich crisp and prevent the bread from getting soggy.
