This soy ginger tuna salad sandwich is everything I want from a spring lunch—fresh, crunchy, and packed with flavor. I used this Soy Ginger Tuna from Fishwife but you can add ginger and soy sauce to classic tinned tuna for the same flavors. The flavor from soy sauce and ginger gives the tuna salty, zingy depth that makes it feel lighter and more vibrant than the classic version. Layered onto bread with a crisp shaved tri-color carrot salad, it brings the perfect contrast of creamy and crunchy in every bite.
What really makes this sandwich feel so seasonal is that gorgeous carrot slaw on top. The ribbons of orange, yellow, and purple carrots mixed with chopped scallions and purple cabbage add color, crunch, and that unmistakable spring produce energy. Finished with a simple rice vinegar and honey drizzle, the topping brings just enough sweet tang to balance the richness of the tuna, making this sandwich feel bright, and perfect for an easy lunch or picnic-style dinner.

Ginger Soy Tuna Salad Sandwich
Ingredients
The tuna salad:
- 1 can of Soy Ginger Tuna (This is a Fishwife Flavor) (See note)
- 1 tbsp Kewpie mayo
- 1 tsp sriracha
- Sprinkle of furikake
The crisp salad:
- 2 carrots, peeled into ribbons
- 1/2 cup purple cabbage, finely chopped
- 1 scallion, sliced
- 1 tbsp rive vinegar
- 1 tsp honey
- Handful of sesame seeds
The rest:
- 2 slices of bread (I liked brioche)
Instructions
- Make tuna salad but combining in a bowl and mixing until nicely combined. Season to taste.
- Make salad by chopping purple cabbage, scallion and shaving the carrots with a veggie peeler. Add to a bowl.
- Drizzle with vinegar, honey and sesame seeds. Season to taste. Set aside and let the salad ingredients meld together.
- Toast bread and top with tuna. Add springy salad. Close and slice. Enjoy!

Note: If you use regular tuna, I would add a tsp of soy sauce and 1/2 tsp shaved ginger to the tuna to get that flavor.
