Make tuna salad but combining in a bowl and mixing until nicely combined. Season to taste.
Make salad by chopping purple cabbage, scallion and shaving the carrots with a veggie peeler. Add to a bowl.
Drizzle with vinegar, honey and sesame seeds. Season to taste. Set aside and let the salad ingredients meld together.
Toast bread and top with tuna. Add springy salad. Close and slice. Enjoy!
