Ginger Soy Tuna Salad Sandwich

This Ginger Soy Tuna Salad Sandwich has a sriracha mayo soy ginger tuna salad and a crunchy springy slaw for a bright, crunchy Asian-style tuna salad sandwich.

Ingredients

Serves 1 sandwich

The tuna salad:

  • 1 can of Soy Ginger Tuna (This is a Fishwife Flavor) (See note)
  • 1 tbsp Kewpie mayo
  • 1 tsp sriracha
  • Sprinkle of furikake

The crisp salad:

  • 2 carrots, peeled into ribbons
  • 1/2 cup purple cabbage, finely chopped
  • 1 scallion, sliced
  • 1 tbsp rive vinegar
  • 1 tsp honey
  • Handful of sesame seeds

The rest:

  • 2 slices of bread (I liked brioche)

Instructions 

  • Make tuna salad but combining in a bowl and mixing until nicely combined. Season to taste.
  • Make salad by chopping purple cabbage, scallion and shaving the carrots with a veggie peeler. Add to a bowl.
  • Drizzle with vinegar, honey and sesame seeds. Season to taste. Set aside and let the salad ingredients meld together.
  • Toast bread and top with tuna. Add springy salad. Close and slice. Enjoy!

Note: If you use regular tuna, I would add a tsp of soy sauce and 1/2 tsp shaved ginger to the tuna to get that flavor.
