Fried avocado BLT

Adding fried avocado puts a twist on the classic BLT and really makes the ultimate breakfast sandwich. I then finished it off with a sriracha aioli, heirloom tomatoes, crispy bacon, romaine and everything bagel seasoning. Perfect for Sunday morning. Hope you enjoyed this series!

Fried avocado BLT

Ingredients

  • 2 ripe avocados
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breakcrumbs
  • salt and pepper to taste
  • Fry oil
  • 4 bagels (plain or your preferred flavor)
  • 8 slices bacon, cooked until crispy
  • Romaine lettuce
  • Tomato slices
  • Sritacha aioli
  • Everything bagel seasoning

Instructions

  • Prepare the avocados by cutting them in half, removing the pits, and peeling off the skin. Slice each avocado into 1/4-inch thick slices.
  • Set up a breading station. Place the flour in a shallow dish, the beaten eggs in another shallow dish, and the breadcrumbs in a third shallow dish. Season the breadcrumbs with salt and pepper to taste.
  • Dip each avocado slice into the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the avocado slice with breadcrumbs, pressing lightly to ensure they adhere. Repeat the process with all the avocado slices.
  • Heat vegetable oil in a large skillet over medium-high heat. You’ll need enough oil to cover the avocado slices when frying. To test if the oil is hot enough, drop a small breadcrumb into the oil – if it sizzles and floats to the top, the oil is ready.
  • Carefully add the breaded avocado slices to the hot oil, working in batches to avoid overcrowding the pan. Fry each side for about 2-3 minutes or until golden brown. Use a slotted spoon or tongs to transfer the fried avocado slices to a paper towel-lined plate to drain any excess oil.
  •  Slice the bagels in half horizontally and lightly toast them. Spread aioli on the bottom half of each bagel. Layer lettuce leaves, tomato slices, fried avocado slices, and bacon on each other. Season with a little everything bagel seasoning and top with the other half of the bagel. Enjoy!
