
Creamy burrata toast with a tomatillo salsa. I have been putting this tomatillo salsa on everything recently because it really is, that good. This combo is tangy, creamy and delicious.. perfect little snack.
Here’s how to make it:

Creamy burrata toast with a tomatillo salsa
Ingredients
Tomatillo salsa:
- 8 tomatillos
- chili
- 1 clove of garlic
- 1/2 a lime
- Small handful of cilantro
- Sea salt and pepper
- 2 tbsp red onion
The rest:
- 1 tbsp sugar (to soften the tomatillos)
- 1 tbsp salt (to soften the tomatillos)
- Burrata
- Bread of choice (this is a Frances pan loaf from whole foods)
- Olive oil
Instructions
- Husk tomatillos and cut into wedges. Add sugar and salt and massage gently with your hands until they start to soften. Let sit for at least an hour. The longer you wait the more tender they become.
- Add salsa ingredients to a food processor or mortar pestle. Mash together until combined. Season to taste.
- Coat bread in olive oil and cook on medium heat for 2-3 min. Add burrata to toast and then top with the salsa. Enjoy!
