Lately, I’ve found myself reaching for this homemade salsa for nearly everything; its flavor is just that good. This new toast is a favorite of mine now: Creamy burrata toast with a tomatillo salsa. The combination of the smooth, creamy burrata and the tangy, zesty salsa makes each bite so delish! It’s the perfect little spring snack. It’s surprisingly easy to make and only takes a few ingredients and a few minutes! You’ll need tomatillos, chili, garlic, cilantro, and red onion for the salsa. Throw it in a food processor or mix it up and voila! Layer your creamy burrata on a piece of toast and then top it with the salsa. This springtime snack has a fun vibrant green color to it of the tomatillo salsa so contrasts well with the creamy white of the burrata, making it as visually appealing as it is tasty. Here’s how to make it:

Creamy burrata toast with a tomatillo salsa

Ingredients

Tomatillo salsa:

  • 8 tomatillos
  • chili
  • 1 clove of garlic
  • 1/2 a lime
  • Small handful of cilantro
  • Sea salt and pepper
  • 2 tbsp red onion

The rest:

  • 1 tbsp sugar (to soften the tomatillos)
  • 1 tbsp salt (to soften the tomatillos)
  • Burrata
  • Bread of choice (this is a Frances pan loaf from whole foods)
  • Olive oil

Instructions

  • Husk tomatillos and cut into wedges. Add sugar and salt and massage gently with your hands until they start to soften. Let sit for at least an hour. The longer you wait the more tender they become.
  • Add salsa ingredients to a food processor or mortar pestle. Mash together until combined. Season to taste.
  • Coat bread in olive oil and cook on medium heat for 2-3 min. Add burrata to toast and then top with the salsa. Enjoy!
