This sourdough breakfast sandwich is loaded with everything you could want in a morning bite: crispy bacon, fluffy eggs, spicy jalapeño cream cheese, golden hash browns, creamy avocado, and of course, a generous drizzle of sriracha for that perfect kick. It’s so good you’ll be making this on repeat!
Start by cooking your egg in the pan, letting it settle until it’s just set. Layer on the bacon, a good dollop of jalapeño cream cheese, crispy hash browns, and a squirt of sriracha, then carefully fold the egg over to hold everything in. Once that’s ready, add it to a slice of toasted sourdough, pile on some fresh avocado slices, and top with another piece of toast. Voila! Jalapeño Cream Cheese and Hashbrown Breakfast Sandwich
Ingredients
- Bread or bagel of choice this is homemade sourdough
- Bacon
- Whipped cream cheese
- 1 tsp jalapeño
- A few frozen hashbrowns
- Sriracha
- Avocado
- 2 eggs
- Butter
Instructions
- Cook bacon in a pan on medium heat until desired crispiness. Transfer to a paper towel lined plate and wipe some of the oil from the pan (leaving a little behind). Add in frozen hashbrowns and cook in the bacon grease for about 5 min or until browned. Transfer to a plate and wipe out the pan.
- Dice jalapeño and add to cream cheese and mix to combine.
- Melt butter in the pan on medium / low heat. Whisk 2 eggs in a bowl and then pour into the pan creating an even layer. Add bacon, cream cheese and hashbrowns to the middle. Top everything with sriracha. Fold in the sides and let cook for another minute to ensure egg is cooked through, being careful not to burn the egg.
- Toast sourdough bread and slice avocado. Add avocado to the bread along with the egg burrito. Enjoy!
