This might be the creamiest, most delicious, 30 minute pasta bake thats is just ideal for making during the week. This is my lemony cheesy pasta with green olives and cherry tomatoes. The sauce has lots of good olive oil, white wine garlic and of course pasta water to bring it all together. It bakes in under 30 minutes and it’s so so good. One of the things that makes this dish so good, is the quality of the ingredients. I use Alessi Extra Virgin Olive oil and Organic Pasta.

Ingredients

  • 1 lb Alessi Paccheri pasta
  • 1 Round of Boursin cheese
  • 1 tbsp Alessi Extra Virgin Olive oil 
  • 1 cup Cherry tomatoes 
  • 1 garlic clove, minced 
  • 3/4 cup Sliced Castelvetrano olives 
  • Splash of dry white wine
  • Splash of pasta water 
  • Juice of half a lemon plus zest
  • Chopped chives for topping 
  • Grated parmesan for topping 
  • Sea salt
  • Pepper

Instructions 

  • Preheat oven to 400. In a baking dish, add Boursin, cherry tomatoes, olives, garlic, white wine, olive oil, lemon/zest, sea salt and pepper. Bake uncovered for about 30 minutes.
  • While boursin is baking, cook pasta according to package, making sure it’s al dente. Don’t forget to reserve a splash of pasta water. Strain pasta.
  • When bake is done, give it a good mix. Add pasta and mix until everything is super creamy and combined. If you need to thicken it up at all, add a splash of pasta water as needed. Top with grated parmesan and chopped chives. Enjoy!
