If you’re looking for the perfect crispy, crunchy, and cheesy snack to make for the Super Bowl (or football Sunday) gathering, you need to save these blue cheese and balsamic smashed brussel sprouts. This easy-to-make appetizer is packed with flavors including balsamic, a layer of parm, and lots of blue cheese!

The Brussels sprouts are first baked on a golden, crispy layer of parmesan cheese, giving them that incredible crunch. Then, they’re generously sprinkled with crumbles of blue cheese creating the ultimate savory bite. Once they turn brown and bubbly in the oven, add a drizzle of rich balsamic glaze and that’s it!

These smashed sprouts take just minutes to prepare, and they’re also totally addicting—you might want to make a double batch! Blue cheese & balsamic smashed brussel sprouts

Ingredients

  • 1 lb Brussel sprouts, ends trimmed
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Cayenne pepper
  • Flaky sea salt
  • 1/2 cup Grated parmesan
  • 1/3 cup Blue cheese crumbled 
  • Pepper
  • Balsamic glaze

Instructions

  • Preheat oven to 425. Bring a large pot of water to a boil. Add brussel sprouts to the boiling water and cook for about 8 min or until tender but still keep their bright green color. 
  • Drain and transfer to a bowl of ice water. Add little sprinkles of parmesan cheese (about a tsp) in rows on a baking sheet. Pat brussels dry and add to a sheet pan, on top of the parmesan. Using the bottom of a glass, press down on each sprout until they smash and flatten. 
  • Sprinkle each with blue cheese crumbles, salt and pepper. Bake for about 5-8 minutes, or until the sprouts are browned and bubbly. Drizzle with balsamic and serve. Enjoy!  

Notes

If you find they are not smashing easily, transfer to a bowl and microwave for a minute or two.
