BBQ Chicken Sandwich

If you have any leftover chicken in the fridge, this is absolutely the sandwich you need to make with it. This BBQ chicken sandwich is perfect with baked, rotisserie, or really whatever chicken you have on hand.


The Deets:
This is what I make whenever I have some leftover chicken in the fridge – this is my bbq chicken sandwich with a crispy crunchy slaw. You’ve seen me make this slaw before, it’s got lots of crunch and some banana peppers to get it nice and pickly. For the chicken, use whatever you have on hand, baked or rotisserie work great. I used Momofuku sweet and savory BBQ sauce and melted a little mozzarella on the bread and that is this weeks lunch fixation. I hope you give it a try. Enjoy! 

BBQ Chicken Sandwich

Ingredients

The chicken:

  • 1 cup Shredded chicken Baked or rotisserie work great
  • 3 tbsp BBQ sauce I used a sweet and savory one
  • 1 tbsp Yogurt Mayo or sour cream would also work for this
  • 1 tbsp Sesame seeds
  • 1 Scallion, chopped

The slaw:

  • 1 cup Romaine, chopped
  • 1/3 cup Cabbage, chopped
  • 1/4 cup Banana peppers
  • 2 tbsp Banana pepper juice
  • 2 tbsp Sour cream You could use mayo or yogurt as an alternative
  • Sea salt
  • Pepper

The rest:

  • Brioche bread or buns
  • 1/3 cup Mozzarella, shredded
  • Red pepper flakes (optional)

Instructions

  • Set oven to broil.
  • Shred chicken and add to a bowl along with BBQ sauce, yogurt, scallions and sesame seeds. Season with salt and pepper. Mix until creamy and combined.
  • Add all slaw ingredients to a bowl and mix well. Season to taste and adjust if you like it more pickly or creamy. This is really up to you.
  • Add shredded mozzarella to two slices of bread. Sprinkle a few red pepper flakes on there for a little extra heat. Broil for about 2-3 min or until cheese is bubbly.
  • Add a few scoops of the BBQ chicken and a scoop of slaw to the bread. Thats it! Enjoy!
