A classic Saturday morning breakfast: bacon eggs & avocado on sourdough with some feta crumbles, herbs and everything but the bagel seasoning. I find grating an egg is an ideal bite with the perfect bacon to egg ratio.

Bacon, eggs and avocado toast
Ingredients
- Bread of choice
- 1 Egg
- 1/2 Avocado
- A few slices of bacon
- Feta crumbles
- Everything but the bagel seasoning
- Herbs (optional)
- Olive oil
- Pepper
Instructions
- Bring a pot of water to a boil. Carefully, add eggs and cook for 8 min for a slightly jammy egg. You don’t want it too jammy or it will be hard to grate. Remove from water and add to an ice bath.
- Add slices of bacon to a pan and cook until desired crispiness. Transfer to a towel lined plate.
- Coat bread in olive oil (or you could make in a little of the bacon fat if youre feeling crazy). Cook for 2-3 min per side or until bread is browned and crispy.
- Top with avocado and bacon. Using a grater, shave egg over top. Sprinkle with feta cheese and season with everything but the bagel seasoning, pepper and herbs of choice if youre adding. Enjoy!
