Bring a pot of water to a boil. Carefully, add eggs and cook for 8 min for a slightly jammy egg. You don’t want it too jammy or it will be hard to grate. Remove from water and add to an ice bath.
Add slices of bacon to a pan and cook until desired crispiness. Transfer to a towel lined plate.
Coat bread in olive oil (or you could make in a little of the bacon fat if youre feeling crazy). Cook for 2-3 min per side or until bread is browned and crispy.
Top with avocado and bacon. Using a grater, shave egg over top. Sprinkle with feta cheese and season with everything but the bagel seasoning, pepper and herbs of choice if youre adding. Enjoy!
