Avocado toast with a fried egg yolk and scallion cream cheese

This avocado toast with a fried egg yolk will be your new favorite brunch!

The ultimate way to level up your avocado toast is with fried egg yolks and scallion cream cheese. The fried egg yolks are SO GOOD and not hard to make at all. Let’s start with the star of the show: the fried egg yolks. Don’t be intimidated by the thought of frying them—trust me, they’re incredibly easy to make and oh-so-satisfying to indulge in. However, a word of caution: when coating your egg yolks in breadcrumbs, handle them carefully to ensure they maintain their perfect shape and don’t break before hitting the skillet. This avocado toast is just full of flavor. Now, onto the scallion cream cheese—a match made in breakfast heaven. Its creamy richness and subtle onion flavor perfectly complement the creamy avocado and decadent fried yolk, creating a symphony of flavors that will have your taste buds singing with delight. I used sourdough bread for this as it’s both crunch and chewy and the perfect base for this toast. So go ahead, treat yourself to this indulgent avocado toast creation and savor every mouthful. Whether you’re enjoying it leisurely on a lazy Sunday morning or whipping it up as a weekday breakfast treat, it’s guaranteed to brighten your day and leave you feeling satisfied and content. Ingredients

  • Bread of choice
  • Half an avocado
  • A few tbsp of cream cheese
  • 2 scallions
  • Squeeze of lemon
  • Sea salt and pepper
  • Panko breadcrumbs

  • Add fry oil to a pan and fry yolks for about 1-2 min. Careful not to overcook.
  • Coat bread in olive oil and cook for 2-3 min per side. Meanwhile combine scallions and cream cheese in a small bowl and add to bread.
