This Salmon Goat Cheese Sandwich is the fresh summer sandwich you didn’t know you needed. It’s light, high in protein and easy to make. Pack for the beach, a BBq, or sitting poolside.

Why You’ll Love this Recipe:
This Salmon and Goat Cheese Sandwich is what summer dreams are made of—bright, herby, and effortless. It starts with lemon-garlic hot smoked salmon (already cooked and ready to flake!), which brings rich, smoky flavor without turning on the stove. Because it is ready to make salmon, it comes together in less than 15 minutes.
The goat cheese is whipped with olive oil, lemon zest, and a garden’s worth of fresh herbs until it’s creamy and vibrant, the perfect contrast to the warm, savory salmon. Add a juicy layer of heirloom tomatoes and a handful of peppery arugula, and tuck it all into a crusty ciabatta roll. It’s the kind of sandwich that feels a little fancy but comes together in minutes—ideal for a backyard lunch with a glass of something cold and a little sun on your shoulders.
