Salmon and Goat Cheese Sandwich

This Salmon and Goat Cheese Sandwich is a summer staple with goat cheese and ready-made lemon herb salmon so it comes together in 15 minutes.

Ingredients

The goat cheese spread:

  • 6 oz Goat cheese, softened
  • 2 tbsp Grated parmesan cheese
  • 1/3 cup Extra Virgin Olive Oil
  • Fresh basil
  • Fresh dill
  • Juice of about half a lemon
  • Sea salt
  • Pepper
  • Red pepper flakes

The rest:

  • 4 oz Acme Hot Smoked Lemon Garlic Smoked Salmon This would also work with a fresh piece of cook salmon
  • Handful of arugula
  • 2 Slices of tomato 
  • Extra Virgin Olive Oil
  • Ciabatta loaf 

Instructions

  • Make the goat cheese spread by combining all the ingredients in a bowl and mixing by hand for a bit of a chunkier spread, or transfer to a food processor and blend until smooth. Season to taste. 
  • Slice ciabatta and brush with olive oil. Add more oil to a skillet and add slices of bread. Cook for about 2-3 min per side on medium heat until crispy and browned. 
  • Add goat cheese spread in an even layer and top with large flaked pieces of the Lemon Garlic Smoked Salmon. Top with a handful of arugula and slices of tomato. Season tomatoes with sea salt, pepper and a sprinkle of red pepper flakes (optional). Close sandwich, slice and enjoy! 

Notes

Note: If the spread is too thick, I will sometimes use a tsp of heavy cream or milk to just get the consistency right.
