This Salmon and Goat Cheese Sandwich is a summer staple with goat cheese and ready-made lemon herb salmon so it comes together in 15 minutes.
Ingredients
The goat cheese spread:
6ozGoat cheese, softened
2tbspGrated parmesan cheese
1/3cupExtra Virgin Olive Oil
Fresh basil
Fresh dill
Juice of about half a lemon
Sea salt
Pepper
Red pepper flakes
The rest:
4ozAcme Hot Smoked Lemon Garlic Smoked SalmonThis would also work with a fresh piece of cook salmon
Handful of arugula
2Slices of tomato
Extra Virgin Olive Oil
Ciabatta loaf
Instructions
Make the goat cheese spread by combining all the ingredients in a bowl and mixing by hand for a bit of a chunkier spread, or transfer to a food processor and blend until smooth. Season to taste.
Slice ciabatta and brush with olive oil. Add more oil to a skillet and add slices of bread. Cook for about 2-3 min per side on medium heat until crispy and browned.
Add goat cheese spread in an even layer and top with large flaked pieces of the Lemon Garlic Smoked Salmon. Top with a handful of arugula and slices of tomato. Season tomatoes with sea salt, pepper and a sprinkle of red pepper flakes (optional). Close sandwich, slice and enjoy!
Notes
Note: If the spread is too thick, I will sometimes use a tsp of heavy cream or milk to just get the consistency right.
