Avocado Cheddar BBQ Chicken Sandwich
Ingredients
- Ciabatta loaf
- 1/2 cup Extra Sharp Cheddar
- 1/2 Avocado
- 2 Chicken thighs
- Olive oil
The Dressing:
- Juice of half a lemon (about 3 tbsp)
- 1 Small garlic clove, grated
- 1 tsp Dijon mustard
- 1 tsp Mayo
- 1/3 cup Olive oil
- Sea salt
- Pepper
Instructions
- Preheat grill or oven to 400 degrees. Wash chicken and pat dry. Drizzle both sides with olive oil, salt and pepper. Cook for about 5-7 min per side or until temp has reached 165 internally. Remove and slice into bite sized pieces.
- Set oven to broil and add shredded cheese to ciabatta and broil until bubbly.
- Make the dressing: Combine all dressing ingredients in a mason jar and shake until combined and smooth.
- Slice avocado and assemble your sandwich by adding slices of chicken, avocado, tomato. Drizzle with vinaigrette and top with fresh arugula. Enjoy!
