Avocado Cheddar BBQ Chicken Sandwich

Ingredients

  • Ciabatta loaf
  • 1/2 cup Extra Sharp Cheddar
  • 1/2 Avocado
  • 2 Chicken thighs
  • Olive oil

The Dressing:

  • Juice of half a lemon (about 3 tbsp)
  • 1 Small garlic clove, grated
  • 1 tsp Dijon mustard
  • 1 tsp Mayo
  • 1/3 cup Olive oil
  • Sea salt
  • Pepper

Instructions

  • Preheat grill or oven to 400 degrees. Wash chicken and pat dry. Drizzle both sides with olive oil, salt and pepper. Cook for about 5-7 min per side or until temp has reached 165 internally. Remove and slice into bite sized pieces.
  • Set oven to broil and add shredded cheese to ciabatta and broil until bubbly. 
  • Make the dressing: Combine all dressing ingredients in a mason jar and shake until combined and smooth.
  • Slice avocado and assemble your sandwich by adding slices of chicken, avocado, tomato. Drizzle with vinaigrette and top with fresh arugula. Enjoy!
