One of the brightest, most flavorful apps I love to make this time of year: whipped goat cheese dip with grapefruit and a citrus chili vinaigrette. The goat cheese is whipped until it gets all creamy and then it’s topped with lots of Florida Grapefruit for the ultimate combo of sweet and tart. Then I added crushed pistachios, a little mint and some red onion. Finish it off with a sweet and spicy grapefruit vinaigrette, made with Florida Grapefruit Juice, and you have the perfect spring appetizer in under 30 minutes.

Ingredients

The whipped goat cheese:

  • 8 oz Goat cheese, softened
  • 2 tbsp Full fat Greek yogurt
  • 2 tbsp Hot or regular honey
  • 2 tbsp Lemon juice
  • A few sprigs of chopped mint
  • Sea salt
  • Pepper

The citrus chili vinaigrette:

  • 1/4 cup Florida Grapefruit Juice
  • 2 tbsp Lime juice 
  • 1 tsp Rice wine vinegar 
  • 1 tbsp Honey
  • 1 tsp Diced habanero
  • 1/8 cup Olive oil
  • Sea salt
  • Pepper

The rest:

  • 2 Florida Grapefruits
  • Fresh mint
  • Red onion 
  • 1/3 cup Crushed pistachios
  • Thin slices of habanero (optional)
  • Crispy sourdough bread

Instructions

  • Make the whipped goat cheese by combining all the ingredients in a bowl or food processor. Mix or blend thoroughly until combined. Season to taste. 
  • Slice the ends of the Florida Grapefruit. Using a small knife, supreme the grapefruit, discarding the membrane. 
  • Make the citrus chili vinaigrette by combining ingredients in a bowl and whisking until smooth and combined. Season to taste. 
  • Add whipped goat cheese to a shallow bowl and spread into an even layer. Top with slices of the Florida Grapefruit, crushed pistachios, slices of red onion and habanero (if using). Add a few more sprigs of fresh mint. 
  • Drizzle the vinaigrette overtop and serve with toasted sourdough bread, crackers or whatever you prefer. Enjoy!
