Make the whipped goat cheese by combining all the ingredients in a bowl or food processor. Mix or blend thoroughly until combined. Season to taste.
Slice the ends of the Florida Grapefruit. Using a small knife, supreme the grapefruit, discarding the membrane.
Make the citrus chili vinaigrette by combining ingredients in a bowl and whisking until smooth and combined. Season to taste.
Add whipped goat cheese to a shallow bowl and spread into an even layer. Top with slices of the Florida Grapefruit, crushed pistachios, slices of red onion and habanero (if using). Add a few more sprigs of fresh mint.
Drizzle the vinaigrette overtop and serve with toasted sourdough bread, crackers or whatever you prefer. Enjoy!
