One of my favorite quick and satisfying breakfasts as of late: this dreamy avocado toast topped with a smashed jammy egg, creamy Greek yogurt, and a sprinkle of tangy pickled shallots. It’s the kind of meal that feels fancy but takes no time at all—truly as easy as boiling an egg.

What I love about this combo is how it hits all the marks: it’s rich and creamy from the avocado and yogurt, perfectly savory with that jammy egg (you have to try smashing it over the toast), and the pickled shallots add the most amazing pop of flavor to cut through it all. Plus, it’s packed with protein, so you’re full and fueled for the day ahead.

Avocado Toast with a Smashed Jammy Egg

Ingredients

  • Bread of choice this is a sourdough
  • 1 avocado
  • Everything but the bagel seasoning
  • A few cherry tomatoes
  • Juice from a lemon
  • A drizzle of olive oil + more for toasting bread
  • Salt/pepper
  • Greek yogurt
  • 1 egg
  • Pickled shallots or red onion

Instructions

  • Bring a medium sized pot of water to a boil. Carefully, add your egg and cook for about 7 min for a perfectly jammy egg. Remove and transfer to a bowl of ice water to stop the cooking. Peel and discard shell.
  • Meanwhile coat bread in olive oil and cook for 2-3 min per side in a skillet. Remove and top with greek yogurt.
  • Add avocado, lemon juice, everything bagel seasoning, olive oil and egg to a bowl. Mash with a fork until combined. Top on the greek yogurt and then add pickled shallots. Enjoy!
