Bring a medium sized pot of water to a boil. Carefully, add your egg and cook for about 7 min for a perfectly jammy egg. Remove and transfer to a bowl of ice water to stop the cooking. Peel and discard shell.
Meanwhile coat bread in olive oil and cook for 2-3 min per side in a skillet. Remove and top with greek yogurt.
Add avocado, lemon juice, everything bagel seasoning, olive oil and egg to a bowl. Mash with a fork until combined. Top on the greek yogurt and then add pickled shallots. Enjoy!
