Mediterranean Style Breakfast Wrap 

These Mediterranean-style breakfast wraps are super tasty, high protein and easy to make. The veggie mix only gets better the longer the ingredients are combined so definitely save to make all week! 

The Deets:
I threw this together recently for breakfast and turned out so tasty. I’m calling this a Mediterranean style breakfast wrap because its got some fresh veggies, Kalamata olives, and fresh feta. I then wrapped it up with some soft scrambled eggs. The veggie mix only gets better the longer the ingredients are combined so keep in the fridge. Super easy and so tasty.

Mediterranean Style Breakfast Wrap

Ingredients

The veggie mix:

  • Sliced cherry tomatoes
  • Minced jalapeño
  • Minced red onion
  • Minced garlic 
  • Chopped olives of choice These are kalamata
  • A glug of Extra Virgin olive oil
  • A few tbsp of red wine vinegar 
  • Squeeze of lemon 
  • Flaky sea salt
  • Pepper
  • Chopped parsley 
  • Chopped basil 

The rest: 

  • 1/2 Avocado
  • 1 Wrap
  • Feta cheese crumbles 
  • 2 Eggs
  • Butter

Instructions

  • Mince veggies and combine in a bowl. Let sit while you make everything else. The longer these ingredients are combined, the better they taste. 
  • Melt butter in a skillet on high heat. Whisk 2 eggs in a bowl and then add to the pan. Turn heat to low, and then using a spatula, fold the eggs into each other to make ribbons. Turn off heat. 
  • Add eggs, sliced avocado, veggie mix and feta crumbles to a wrap. Rinse the pan you cooked the eggs in melt in a little more butter. Fold wrap and add to a pan, pressing to the wrap is closed and secure. Cook for about 2-3 min per side. Slice and enjoy!
