Mediterranean Style Breakfast Wrap

Ingredients

The veggie mix:

  • Sliced cherry tomatoes
  • Minced jalapeño
  • Minced red onion
  • Minced garlic 
  • Chopped olives of choice These are kalamata
  • A glug of Extra Virgin olive oil
  • A few tbsp of red wine vinegar 
  • Squeeze of lemon 
  • Flaky sea salt
  • Pepper
  • Chopped parsley 
  • Chopped basil 

The rest: 

  • 1/2 Avocado
  • 1 Wrap
  • Feta cheese crumbles 
  • 2 Eggs
  • Butter

Instructions

  • Mince veggies and combine in a bowl. Let sit while you make everything else. The longer these ingredients are combined, the better they taste. 
  • Melt butter in a skillet on high heat. Whisk 2 eggs in a bowl and then add to the pan. Turn heat to low, and then using a spatula, fold the eggs into each other to make ribbons. Turn off heat. 
  • Add eggs, sliced avocado, veggie mix and feta crumbles to a wrap. Rinse the pan you cooked the eggs in melt in a little more butter. Fold wrap and add to a pan, pressing to the wrap is closed and secure. Cook for about 2-3 min per side. Slice and enjoy!
