An easy way to level up egg salad, combine with this sweet and savory sauce to take it to the next level!

The Deets:
A sweet and savory take on egg salad, this is my avocado toast with a jammy egg salad thats tossed in a mix of kewpie mayo, soy sauce, sweet chili and sriracha. Great snack or lunch idea!

Sweet & Savory Egg Salad Toasts
Ingredients
- Bread of choice
- Olive oil for toasting
- 1/2 Avocado
- 3 Eggs
- 1 tbsp Sriracha
- 1 tbsp Kewpie mayo
- 1 tsp Soy sauce
- 1 tsp Sweet chili sauce
- Furikake
- 1/2 tsp Sesame oil
- Black sesame seeds for topping
Instructions
- Bring a pot of water to a boil. While waiting for the water to boil. Add eggs to water and cook for 7.5 min for a slightly jammy egg. Remove from water and add to an ice bath. Peel and break into pieces and add to a bowl.
- Add sriracha, mayo, soy, sweet chili and sesame oil and furikake to the eggs and toss gently until combined.
- Coat bread in olive oil and cook 2-3 min per side in a pan. Slice avocado and add to bread along with scoops of the sweet and spicy eggs. Top with sesame seeds and that’s it! Enjoy!
