Bring a pot of water to a boil. While waiting for the water to boil. Add eggs to water and cook for 7.5 min for a slightly jammy egg. Remove from water and add to an ice bath. Peel and break into pieces and add to a bowl.
Add sriracha, mayo, soy, sweet chili and sesame oil and furikake to the eggs and toss gently until combined.
Coat bread in olive oil and cook 2-3 min per side in a pan. Slice avocado and add to bread along with scoops of the sweet and spicy eggs. Top with sesame seeds and that’s it! Enjoy!
