Spicy cheddar & cream cheese egg sandwich


This is the sandwich you make when you want something crispy, crunchy, and cheesy, this is my spicy cheddar & cream cheese egg sandwich. It is the perfect hangover cure, or just a weekend breakfast.

Perfect as a hangover cure or an indulgent weekend breakfast, this sandwich brings comfort and bold flavors to your plate. The magic lies in the irresistible combination of Trader Joe’s chili pepper cheddar and cream cheese, which melt into the eggs to create a rich, creamy, and slightly spicy filling. The other secret ingredient here is the hashbrowns. Folded into perfectly cooked eggs and sandwiched between toasted bread, this recipe hits all the right notes for a meal you’ll want to make again and again. Whether you’re starting your day or recovering from the night before, this sandwich is guaranteed to hit the spot. It’s so good I am going to be making this one on repeat.

Spicy cheddar & cream cheese egg sandwich

Ingredients

  • Brioche bun
  • 1 Hashbrown per sandwich
  • Sriracha aioli (I just mixed kewpie mayo and sriracha)
  • 2 Eggs
  • 2 tbsp Butter
  • 1/4 cup Trader Joes chili pepper cheddar cheese
  • 1 tbsp Whipped cream cheese
  • 1 tbsp Banana peppers 
  • 2 Slices of bacon 
  • Chives for topping 
  • Sea salt

Instructions

  • Preheat oven to 400 and add hashbrown. Cook for about 10 min, flipping halfway through. (If you want, you could finish the hashbrown in a skillet for a little added crisp, up to you)
  • Add slices of bacon to skillet and cook on medium heat for about 6 min per side or however crispy and cooked you want. 
  • Whisk eggs and grate cheese. Get a pan hot and then add butter. Pour eggs in an even layer. Add cream cheese, grated cheddar and chives to the center of the eggs in the pan. By this point the eggs should be pretty set. Fold the eggs in on each side until they are wrapped kind of like a present. Cook for about 2 min or so for the eggs to finish cooking and melt the cheese inside.
  • Toast brioche bun and add sriracha aioli. Add eggs, hashbrown, bacon and banana peppers. Enjoy!
