Creamy Burrata Toast with a Tomatillo Salsa

This Creamy Burrata Toast with a homemade Tomatillo Salsa is full of flavor!

This Creamy Burrata Toast with Tomatillo Salsa is a fresh, tangy twist on a classic cheese toast. Thick slices of toasted bread are topped with luscious burrata, its rich center spilling over the edges. A spoonful of bright, zesty tomatillo salsa cuts through the creaminess, adding a pop of acidity and a touch of heat that wakes up the palate with every bite.

This dish beautifully balances bold flavors and contrasting textures—crunchy toast, silky cheese, and juicy salsa. The tomatillo brings a refreshing brightness that pairs perfectly with the mild, milky burrata, making it a standout option for brunch or a light lunch. Finished with a drizzle of olive oil and fresh herbs, it’s simple yet full of vibrant character.

Creamy burrata toast with a tomatillo salsa

Ingredients

Tomatillo salsa:

  • 8 tomatillos
  • chili
  • 1 clove of garlic
  • 1/2 a lime
  • Small handful of cilantro
  • Sea salt and pepper
  • 2 tbsp red onion

The rest:

  • 1 tbsp sugar (to soften the tomatillos)
  • 1 tbsp salt (to soften the tomatillos)
  • Burrata
  • Bread of choice (this is a Frances pan loaf from whole foods)
  • Olive oil

Instructions

  • Husk tomatillos and cut into wedges. Add sugar and salt and massage gently with your hands until they start to soften. Let sit for at least an hour. The longer you wait the more tender they become.
  • Add salsa ingredients to a food processor or mortar pestle. Mash together until combined. Season to taste.
  • Coat bread in olive oil and cook on medium heat for 2-3 min. Add burrata to toast and then top with the salsa. Enjoy!
