This goat cheese and cherry tomato bake is the perfect summer appetizer.

The Deets

The best way to eat goat cheese (and an ode to the @pumprulesbravo goat cheese balls), in my opinion, is coated in breadcrumbs. This dish is just that: Goat cheese coated in breadcrumbs, baked and served with balsamic glaze, cherry tomatoes, and crispy sourdough bread. It’s really easy to make and doesn’t require much prep or cooking, and you can probably use what’s already in the pantry! You just need your cheese, breadcrumbs, balsamic vinegar, salt, pepper, red pepper flakes, cherry tomatoes, a leek, balsamic glaze and some sourdough bread! You’ll cook up your tomatoes in a pan and let them “burst.” Add some olive oil and balsamic to the pan. Once you roll your cheese in breadcrumbs, you’ll pop them in the oven for a little bit and then add them to the pan and cook. It’ll get nice and crispy and so soft and warm inside. Toast up some bread and add a layer of this bake on top and enjoy! This is a great snack, appetizer, or really whatever you want it to be. It’s definitely a crowd-pleaser!
