Avocado “Egg in a hole”

Meet your next breakfast obsession with this avocado “egg in a hole.”

The Deets

This delightful twist on the classic “egg in a hole” recipe brings a fresh and flavorful update to a nostalgic favorite. Instead of the traditional bread, this version uses a slice of creamy avocado as the base. Crack an egg into the hollowed-out avocado and let it cook to perfection, surrounded by the rich flavors of melted Gruyere cheese. The class egg in a hole would just crack the egg into a circle inside a piece of toast but I upped the game a little bit here using the avocdao. The dish is seasoned with a generous amount of cracked black pepper and a sprinkle of red pepper flakes for a bit of heat. To finish, drizzle your favorite hot sauce over the top for an extra kick. Also, feel free to add more cheese to the final product… the more the merrier! This modern take on a beloved breakfast classic is sure to become a new favorite in your kitchen. Ingredients

  • Bread of choice (this is a crispy sourdough)
  • Avocado slice
  • Gruyere cheese
  • Egg
  • Olive Oil
  • Red pepper flakes
  • Salt and pepper
  • Hot sauce of choice (optional)

Instructions

  • Slice avocado and remove skin. Using a spoon, scoop out a little more of the middle so there is room when you crack your egg.
  • Coat bread in olive oil and cook 2-3 min on one side. Flip and add avocado slice to the middle. Crack egg in the avocado hole. Grate lots of cheese over top and season with salt and pepper. Cover with a lid and cook on low to medium heat until egg is cooked to your liking.
  • Remove and serve with more cheese and your favorite hot sauce. Enjoy!
