This sun-dried tomato grilled cheese was inspired by a wedge of incredible Gruyère I got in Paris. The nutty, melty cheese is grated and spread onto sourdough bread with chopped sun-dried tomatoes and lemony dressed arugula. It is toasted in a pan with a little melted butter until the Gruyère becomes perfectly gooey and savory, creating the most easy and tasty grilled cheese sandwich.

It’s simple but incredibly delicious—one of those grilled cheeses that feels just a little bit special.

Sun-Dried Grilled Cheese

This Sun-Dried Grilled Cheese combines it all– chopped sun-dried tomatoes, gruyere cheese, lemony arugula, all on crispy sourdough bread. It’s quick to make and great for a weekday lunch.

Ingredients

  • 2 slices of sourdough bread
  • 1 cup shredded gruyere cheese
  • Handful of arugula
  • Squeeze of lemon
  • 1/2 tsp oregano
  • 1/4 cup chopped sun-dried tomatoes
  • 1 tbsp butter
  • Drizzle of olive oil

Instructions 

  • Grate gruyere cheese and chop sun-dried tomatoes. Add cheese to bread and top with the tomatoes.
  • Add arugula to a bowl and drizzle with olive oil, a pinch of oregano and a squeeze of lemon. Add on top of the sandwich. Close sandwich.
  • Heat butter in a skillet. Once melted, add bread to skillet. Cook for about 4-5 min per side on medium to low heat, until cheese is melty and the bread is golden brown. Enjoy!
