Sweet caramelized onions, deeply savory sautéed mushrooms, and melty fontina cheese are layered between two slices of buttery sourdough bread and toasted until golden and crispy. It’s a simple combination of ingredients that makes for an incredibly flavorful sandwich.

  • Balsamic Reduction: Adds a touch of tangy sweetness and depth that complements the caramelized onions and mushrooms.
  • Thyme: Adds a subtle earthy, herbaceous flavor to the caramelized onions.

How to Make Grilled Cheese Mushroom Sandwich

1. Sauté the onions: Using a mandolin or knife, thinly slice the onion. Heat 2 tbsp butter in a skillet over medium heat. Add the sliced onions with a pinch of salt and pepper and cook, stirring occasionally, for 10 minutes until soft and slightly golden. Drizzle in the balsamic glaze and cook another 2–3 minutes until jammy. Remove from the pan and set aside.

2. Sauté the mushrooms: In the same skillet, 2 tbsp butter over medium-high heat. Slice mushrooms and add to pan along with sprigs of thyme. Let them cook undisturbed for a few minutes to develop color. Stir and continue cooking until golden and tender, about 6–8 minutes total. Season with salt and pepper.

3. Assemble the sandwiches: Butter one side of each slice of sourdough. On the unbuttered side, layer fontina cheese, a generous spoonful of balsamic onions, sautéed mushrooms, and a little more cheese. Top with the second slice of bread, buttered side facing out.

4. Grill until melty: Heat a skillet over medium. Cook sandwiches 3–4 minutes per side, pressing gently, until the bread is golden and crisp and the fontina is fully melted.

5. Slice and serve warm — crispy on the outside, sweet and savory, and irresistibly gooey in the center.

Expert Tips

  • Caramelize the Onions Slowly: Cook the onions over medium to medium-low heat, stirring occasionally, to develop a deep golden color and bring out their natural sweetness without burning.
  • Don’t Rush the Mushrooms: Let the mushrooms cook undisturbed for the first few minutes so they develop a golden-brown sear instead of steaming.
  • Use One Skillet: Cook the onions, mushrooms, and final grilled cheese in the same skillet to build flavor while keeping cleanup to a minimum.
  • Press the Sandwich Gently: Lightly press down on the sandwich with a spatula while grilling to help everything hold together and ensure the bread gets evenly golden and crispy.

Variations & Substitutions

  • Swap the Cheese: Substitute fontina with Gruyère for a nuttier flavor or provolone for a mild, creamy cheese that melts just as wel
  • Add Fresh Greens: Layer in fresh arugula or spinach for a pop of freshness that balances the rich mushrooms, onions, and cheese.
  • Mix Up the Mushrooms: Combine cremini and wild mushrooms for a deeper, earthier flavor and a variety of textures.
  • Add a Flavorful Spread: Spread a thin layer of Dijon mustard or garlic aioli on the sourdough before assembling for an extra layer of tangy or savory flavor.

Fridge, Freezer, and Make Ahead

Fridge

Store leftover grilled cheese in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium-low heat until the bread is crispy and the cheese is melted, or use an air fryer to bring back the crunch.

Freezer

Freezing the assembled sandwich isn’t recommended, as the mushrooms and caramelized onions can release moisture when thawed, making the bread soggy. However, you can freeze the cooked mushroom and onion mixture in an airtight container for up to 2 months.

Make Ahead

The caramelized onions and sautéed mushrooms can be prepared up to 3 days in advance and stored separately in airtight containers in the refrigerator. When ready to serve, assemble the sandwiches with fresh sourdough and fontina cheese, then grill until golden and melted.

FAQs

Can I make the onions and mushrooms ahead of time?

Yes! Both the caramelized onions and sautéed mushrooms can be made up to 3 days in advance and stored in separate airtight containers in the refrigerator. When you’re ready to eat, simply assemble the sandwich with the cheese and sourdough and grill until golden and crispy.

What’s the best cheese substitute for fontina?

Gruyère is a great substitute for fontina because it melts beautifully and has a slightly nutty flavor that pairs well with the mushrooms and caramelized onions. Provolone is another great option if you prefer a milder, creamier cheese.

Can I use just one type of mushroom instead of a mix?

Absolutely! Cremini mushrooms (baby bellas) are a great choice because they have a rich, earthy flavor and hold up well when sautéed. You can also use shiitake, oyster, or white button mushrooms depending on what you have available.

Can this be made vegan?

Absolutely! To make this grilled cheese vegan, swap the fontina for your favorite plant-based melting cheese and use vegan butter or olive oil to cook the onions, mushrooms, and sandwich. Just make sure your sourdough bread is vegan-friendly as well.
