Preheat oven to 400 degrees.
Make the creamy feta: Combine the feta ingredients and add to a food processor and blend until smooth and combined. Season to taste.
Make the pork: Combine ground pork, onion, garlic and herbs to a skillet. Cook until the pork is browned and cooked through.
Prep the zucchini: Slice zucchini in half and using a spoon, scoop out the middles.
Season the zucchini with salt to bring out some moisture and then brush with olive oil. Add to a baking pan and par-cook for 10 minutes.
Assemble & bake: Remove from the oven and using a spoon, add the creamy feta to the middles. Season with salt and pepper. Add the pork overtop. Bake for another 15 minutes. Remove and add toasted breadcrumbs. Optional additional adds are hot honey or balsamic glaze.
