Smoky Salmon Caesar Lettuce Wraps

Ingredients

Serves 6 Wraps

The rest:

  • 2 Packs of Acme Salmon Candy
  • 6 Large romaine lettuce leaves
  • 1/4 Cup Breadcrumbs
  • 2 Persian cucumbers
  • Slices of red onion
  • 1/4 Cup Pepitas

The dressing:

  • 2 Tbsp Capers, roughly chopped
  • 1 Egg yolk
  • Juice of one lemon
  • 1/4 Cup Olive oil
  • 1 Tbsp Dijon mustard
  • 2 Tbsp Greek yogurt or sour cream
  • 3 Tbsp Grated parmesan cheese
  • Sea salt
  • Pepper

Instructions 

  • Make the dressing by combining capers, egg yolk, lemon juice, dijon, sour cream and parmesan to a bowl. While whisking, slowly drizzle olive oil into the dressing so it get’s nicely combined. Season with salt and pepper and add more olive oil as needed for desired creaminess in the dressing. 
  • In same bowl, add sliced red onion, pepitas and Acme Salmon Candy, broken up into bite sized pieces. Mix until creamy and combined. 
  • Add breadcrumbs to a skillet on medium to low heat and stir frequently for about 5 min or until the breadcrumbs start to brown. 
  • Add salmon caesar to each lettuce wrap and top with crispy breadcrumbs. Enjoy! 

Notes

This makes extra dressing so you can make this for more than one meal, I would suggest removing about half the dressing from the bowl and reserve for later use. Keep the remaining in the bowl to make the wraps.
