Roasted Radishes with Baked Goat Cheese

These Roasted Radishes with Baked Goat Cheese are an easy and impressive spring appetizer or side dish with less than 10 ingredients. A true crowdpleaser for brunch, lunch or dinner.

Ingredients

Serves 4 people
  • 12 radishes chopped

Dressing:

  • 1/2 cup olive oil
  • 1/4 cup balsamic
  • 1 tsp Dijon mustard
  • salt/pepper
  • 1 small minced garlic clove

The goat cheese:

  • 8 oz goat cheese softened
  • breadcrumbs enough to coat the goat cheese
  • Drizzle of balsamic glaze
  • 1 tsp thyme
  • salt/pepper

Toppings:

  • Drizzle of balsamic glaze
  • Chopped scallions

Instructions 

  • Preheat oven to 425. Wash and chop ends of radishes.
  • Add thyme and balsamic to softened goat cheese and form into balls. Coat in breadcrumbs.
  • Make dressing for radishes by combining olive oil, balsamic vinegar, minced garlic, dijon, flaky sea salt and pepper. Coat radishes with dressing and add to a skillet.
  • Roast radishes for 20 minutes. After 20 minutes, remove from oven and move radishes over to make room for the goat cheese patties. Bake for another 10-12 minutes. Top with chopped scallions and a drizzle of balsamic glaze.
