Pizza Toast

This Pizza Toast is the easiest lunch, dinner, or even snack any day of the week. Customize with your favorite pizza toppings for a meal the whole family will love.

Ingredients

Serves 2 toasts
  • 2 slices of sourdough bread
  • 1 cup marinara homemade or store bought
  • 1 ball of fresh burrata cheese
  • 1 tsp Italian seasoning
  • 6 slices cappacollo
  • Flaky sea salt
  • 1 tsp olive oil
  • 1 cup shredded mozzarella

Instructions

  • Preheat oven to 400. add marinara sauce to an 8oz cocotte and top with half a ball of burrata. Bake for 8-10 minutes. This extra step ensure the pizza toast does not get soggy.
  • Brush bread with olive oil and add shredded mozzarella. Transfer to a sheet pan and bake in the oven until cheese is melty, about 3-5 minutes.
  • Turn oven up to broil. Spoon warm marinara and burrata over toast. Add slices of copacolla. Broil for 2-3 min, just until everything in combined and meat is slightly crispy.
  • Sprinkle with Italian seasoning and sliced into wedges.

Notes

Storage & Make Ahead

  • Fridge: Store leftover pizza toast in an airtight container in the refrigerator for up to 2–3 days, although the bread will soften as it sits.
  • Freezer: I don’t recommend freezing the assembled pizza toast, as the burrata and marinara can change in texture and make the bread soggy once thawed.
  • Make ahead: Prep the components ahead of time and store them separately in the refrigerator, then toast the sourdough and warm the marinara and burrata in the mini cocottes just before assembling and serving.
