Grilled Shrimp, Mango, and Avocado Salad with a Coconut Lime Dressing

Ingredients

  • 1/4 lb shrimp per person
  • 1 avocado
  • Bibb lettuce / mixed greens
  • Pickled shallots
  • 1 mango
  • Pepitas
  • 1 lime

Dressing:

  • 1/4 cup coconut milk
  • 1 lime zested and juiced
  • 2 tbsp sambal oelek (chili pasta)
  • 1 tbsp brown sugar
  • 1/4 cup sesame oil
  • salt
  • pepper

Instructions

  • This recipe is super simple, combine all salad ingredients and mix salad dressing. You can grill or sauté shrimp if you don't have access to a grill. I did about 2 min per side and squeeze some lime juice / salt /pepper / red pepper flakes on them. Enjoy!
