Feta & Zucchini Egg Sandwich

This Feta & Zucchini Egg Sandwich has feta baked eggs and fried zucchini on toasted sourdough bread. A delicious, high protein veggie-forward breakfast idea.

Ingredients

The feta eggs:

  • 2 eggs
  • 3 oz feta cheese
  • Salt
  • Pepper

The zucchini:

  • Olive oil
  • 1 zucchini
  • salt
  • pepper
  • red pepper flakes
  • Sourdough bread

Instructions 

Preheat oven to 400. Add feta to a cocotte and crack 2 eggs on top. Season with salt, pepper, red pepper flakes and a drizzle of olive oil. Bake for about 13 min or until egg whites are cooked.

  • Slice zucchini into discs. Add olive oil to a skillet. Once the oil hits 350 degrees, add zucchini and cook for about 10 min per side or until zucchini starts to brown.
  • Toast sourdough and add feta baked eggs and zucchini. Close sandwich and enjoy!
