This Feta & Zucchini Egg Sandwich has feta baked eggs and fried zucchini on toasted sourdough bread. A delicious, high protein veggie-forward breakfast idea.
Preheat oven to 400. Add feta to a cocotte and crack 2 eggs on top. Season with salt, pepper, red pepper flakes and a drizzle of olive oil. Bake for about 13 min or until egg whites are cooked.
Slice zucchini into discs. Add olive oil to a skillet. Once the oil hits 350 degrees, add zucchini and cook for about 10 min per side or until zucchini starts to brown.
Toast sourdough and add feta baked eggs and zucchini. Close sandwich and enjoy!
